Year – 2020
Production:
- half of the must was aged for 12 months on stainless steel on coarse lees, the other half of the must was aged for 12 months on French barrique on coarse lees (consolidated during bottling)
- bottled already fully fermented
- the apples that matured on the barrel are identical to the cider from the red cider (it was one batch, which I placed separately in stainless steel and in the barrel)
- the apples ripened on stainless steel come from the last winter harvest in 2020, the apples were picked frozen and in snow - in the Highlands
- varietal composition - leatherman, crumble, lemon winter
- No added sulphur and other additives, Unfiltered, Unsprayed apples
Aroma:
- intense apple aroma with notes of tangerine, plum, dried chrysanthemum, lemon balm and precious spices
Taste:
- is electrifying, strong, full-bodied, the taste mixes citrus and stone fruit (tangerine, plum, plum), dried and fresh herbs, rare spices with a long mineral finish (light saltiness)
